Our vegetable garden is constantly evolving. Built using regenerative principles, it provides fresh food throughout much of the year while improving the soil with every season. Rather than working against nature, we design the garden to become healthier, more productive, and more resilient over time.
Guests are welcome to wander through the beds, discover different growing methods, and see how a productive garden can thrive with simple, thoughtful techniques.
The Garden
Healthy soil is our greatest asset. Instead of digging, we add layers of compost that feed earthworms, fungi, and beneficial microorganisms. This protects soil structure, reduces weeds, improves water retention, and creates fertile growing beds that improve every year.
No-Dig Gardening
Every square metre matters. Beans, cucumbers, tomatoes, squash, and many flowers climb trellises and arches, allowing us to grow more food in less space while creating beautiful green walkways through the garden.
Growing Up Instead of Out
Rather than planting everything at once, we sow continuously throughout the seasons. As one crop finishes, another takes its place, providing fresh vegetables, herbs, salads, and flowers for much of the year.
Harvests All Year Round
Flowers, herbs, vegetables, and pollinator plants grow side by side. Some attract bees, others confuse pests or improve soil health. Together they create a balanced ecosystem where plants naturally support one another.
Companion Planting
Nothing valuable leaves the garden. Plant material becomes compost, mulch protects the soil, and organic matter is constantly returned to the beds. Healthy soil grows healthy food.
Compost & Soil Building
In Portugal, water is precious. Thick mulch, living soil, careful irrigation, and thoughtful planting help us make every drop count while keeping the garden productive through the dry summer months.
Water-Wise Gardening
Our garden is shared with birds, bees, butterflies, frogs, lizards, and countless beneficial insects. Diversity is one of the most powerful tools for creating a healthy, resilient growing space.
Biodiversity
Every season brings new experiments. We trial different varieties, improve growing systems, and adapt our methods to work with nature. The garden is never finished—it simply becomes richer, more productive, and more beautiful each year.
